The Power of Kale

Add this dark leafy green to to your diet to fight off the flu this February!

Taking some extra steps to avoid the flu for the remainder of winter isn't so hard when you're satisfying your appetite at the same time! One way to do so is by
including more dark leafy greens to your diet. Our favorite, and among the most
health supportive, is Kale!

Kale is a hardy, cold-weather leafy green full of vitamin C, two times the daily
serving in fact! Vitamin C provides resistance against infection, which is vital
during cold and flu season when our immune systems may be at their lowest. In
fact, Kale also provides the nutrients to build a strong immune system and
keeping that system strong can help you fight off the invasion all together.

Dark leafy greens, like Kale, are chock full of vitamins, minerals, fiber and
phytonutrients to keep the body functioning at its best.

Kale is great. I like to make it in a Dutch Oven. First I saute half a red onion and a chopped clove of garlic in a little olive oil. Then I add some turkey bacon and after a teaspoon of paprika. It is then time to start adding the washed, chopped kale to the pot with a touch of chicken broth to deglaze the pot. After all the kale is added and wilted, I add more chicken broth, put the lid on the dutch oven and let it simmer for 20 mins or so. I then add raisins or chopped apple and a little apple brandy. I recover the pot and simmer for another 15 minutes or until the raisins are plump or the apples are soft. Serve with a little high quality balsamic vinegar sprinkled on top.
